Prawn, Mango & Avocado Salad


1. 400g cooked tiger prawn 2. 2 mangos, cut into 2cm cube 3. 2 avocados, cut into 2cm cube 4. 2 limes, plus lime wedges to serve 5. 1/3 cup finely chopped coriander leave 6. 1 long red chilli, seeds removed, finely chopped 7. 1 tbsp Coles Pure Australian Honey 8. 1 tbsp avocado oil (see note) or extra virgin olive oil

Method Steps: 1. Peel, devein, and roughly chop half of the prawns. Place them in a bowl along with the cubed mango and avocado.

Grate the zest of half a lime and juice both limes. Place the lime zest and juice in a small bowl.  

Add the finely chopped coriander, chilli, honey, and oil. Whisk the ingredients together to combine, then season the mixture well with salt and pepper.  

Pour this dressing over the prawn mixture in the bowl and toss everything together until well combined. 

Divide the lettuce leaves among serving plates. Fill each lettuce cup with the prepared salad mixture.  

Garnish with the remaining whole prawns, lime wedges, and optional micro herbs if desired. Serve and enjoy your delicious prawn, mango, and avocado salad!
