– 2 pounds uncooked shrimp (26-30 per pound), peeled and deveined – 4 garlic cloves, minced – 1 teaspoon paprika – 1 teaspoon ground ancho chile pepper – 1 teaspoon ground cumin – 1/2 teaspoon salt – 1/4 teaspoon pepper – 1 medium lime – 1 cup crushed tortilla chips – 1/4 cup chopped fresh cilantro – 1/4 cup olive oil

Ingredients

 Preheat your oven to 425°F.. Put the first 7 ingredients in a greased 15x10x1-inch baking pan.

Grate the zest from the lime and squeeze out the juice. Add both to the shrimp mixture and mix it all together.

In a small bowl, mix together the crushed chips, cilantro, and oil. Sprinkle this mixture over the shrimp.

Bake everything in the oven until the shrimp turn pink, which should take about 12-15 minutes.

Once it's done, top the dish with tomatoes and avocado. You can also serve it with extra lime wedges and cilantro if you like.
