Zucchini And Haloumi Fritters


– 4 medium (500g) zucchini, grated – 150g haloumi, grated – 5 green onions, thinly sliced – 1/3 cup chopped fresh flat-leaf parsley leave – 2 tablespoons chopped fresh basil leave – Tzatziki dip, to serve – Lemon wedges, to serve


Basic batter: – 2/3 cup self-raising flour – 2 egg – 1/2 cup milk

Method: 1. Make the basic batter: Sift the self-raising flour into a bowl and make a well in the center. 

In a jug, whisk together the milk and eggs, then add the mixture to the flour. Whisk until smooth. 

Using your hands, squeeze out the excess moisture from the grated zucchini.  

Stir the zucchini, grated haloumi, sliced green onions, chopped parsley, and chopped basil into the batter. 

Heat 1 tablespoon of oil in a frying pan over medium heat. Using 1/4 cup of the mixture per fritter, cook 4 fritters at a time for 3 minutes on each side or until they are golden and cooked through.  

Repeat the process to make a total of 12 fritters. Serve the fritters with tzatziki dip and lemon wedges.
